1、鱼头抠腮去鳞去黑膜去鱼牙及其连接组织,鱼肉打花刀,冲尽血水

2、然后将鱼头从背部切开

3、鱼头用料酒、盐、胡椒粉腌制十五分钟

4、鱼腌制的时候准备配料,将豆豉、葱姜蒜、小米辣、红剁椒分别切末

5、锅热油,放入豆豉、小米辣、姜蒜末炒香,加蒸鱼豉油烧开

6、然后铺在一面鱼头上

7、锅热油,放入豆豉、剁椒、小米椒、姜蒜末炒香,放入蒸鱼豉油烧开

8、铺在另一面鱼头上

9、蒸锅上汽之后,放入鱼盘,蒸10分钟,关火虚蒸2分钟

10、撒葱花
